I’m currently on maternity leave and I found myself snacking ALL THE TIME. I could never feel full. So out came the quick and easy, not so healthy junk foods and guess what, my baby ended up with really bad eczema. I’ll talk more on that later but what this bad cycle drew me to is crafting my own healthy snacks that I would love, that I can make at home in a pinch, and snack on all day long all the while making sure it’s healthy foods I’m putting into my body.
Okay peeps, so here’s my new favourite salty snack that completely replaces my cravings for chips and keeps me feeling full longer.
Super Crunchy, Salty, Healthy Green Beans
Fresh green beans
Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit)
Wash and prep green beans (however many you want)
Place in cooking tray
Drizzle melted coconut oil on top
Sprinkle garlic powder (be generous!)
Put in oven for 25 minutes
Take out and sprinkle with Himalayan salt
Serve and enjoy!
You can eat these fresh out of the oven or as a snack throughout the day. Healthy can be simple, easy, and quick! Give it a try! It’s a great snack for your kids too!
