Grandma's Healthy Breakfast

Growing up Bela spent many long, hot summers on his grandparents’ farm in Hungary. He loves to tell stories of this time and often, the trigger for his memories, is through his cooking. One very simple meal we have nearly every morning is what we call Grandma’s Breakfast. We’ve added avocado and it makes it even more delicious and nutritious. We started serving this breakfast to our son when he was 9 months old and it helped him get used to more chunky foods. He also loves to play with chunks of potato while we eat.

Instructions for 2 adults + a hungry toddler

  1. In a large pot add water and 3-5 organic potatoes with a pinch of pink salt. Put the potatoes in whole. If the potatoes are on the larger size cut them in half. Bring to a boil and cook for roughly 30 minutes.
  2. In a separate pot bring water to boil. Add 5-6 organic free run eggs. Hard boiled eggs take approximately 10 minutes to cook.
  3. Cut and prepare 1-2 avocados. Mash and add a pinch of pink salt.
